Mother and she said with this recipe the completed bread dough can be rolled out flat to make excellent pizza crust. You would then fill the crust with your favorite toppings and bake without any further rising.

You can also roll the bread dough out flat and brush with melted butter and sprinkle with cinnamon and sugar and then roll it into a long log and slice to make cinnamon rolls. Then place them a small ways apart and let them rise again before baking.

-----------------------Sour Dough Bread---------------------

To Start:

2 cp. "warm" water

2 cp. flour

1 pkg. Yeast

Combine in large bowl, cover loosely and set out for 48 hours to sour. (Yes an odor is normal and it should look bubbly after just a few hours, unless the water was too hot which will kill the yeast)

Recipe above must be fed every 4 days with the following ingredients until ready to make up bread:

3/4 cup sugar

1 cup flour

3 Tablespoons instant mashed potato

(or can substitute this with leftover real mashed potatoes as Grandma Johnson always did, Mom said because they didn’t have instant anything..)

1 cup "warm" water

Set this out overnight, uncovered. If you are not ready to make bread the following day, you must now refrigerate this mix and continue to "feed" it every 4 days for unlimited length of time.

(Mom says Grandma Johnson always had starter ready to use in frig. They also couldn’t just run to the store and buy a loaf of bread.)

 

---------------------BREAD

1 to 1 1/2 cup starter

1/2 teaspoon salt

1/2 cup sugar

1 1/2 cup "warm" water

1/2 cup oil

6 cups flour (or until dough is not sticky)

Mix, knead, put in oiled bowl, turn, pat and set out overnight or until dough is double in size.

Next a.m. punch dough down and knead well again and shape into single loaf pans. Makes 5 small loaves or 3 regular size loaves. Also you can pinch about 1/3 of this and roll in ball to let rise and make fry-bread.

After putting dough in loaf pans, cover and let get double in size before baking. 350 degrees for 30 min.

---------------------FRY BREAD

For that you pinch off and flatten a small amount of risen dough and drop into hot oil and fry till brown. You can fill with taco ingredients or serve with butter and favorite jelly or roll in powdered sugar.
